Well, today has been rather slow.. But I got all my laundry done.. I have to really start getting serious about potty training my 18 month old because she has learned how to pull off her pants and diaper :(

Here is my dinner from last night.. It was the first time I’ve made this recipe and it was AWESOME.. I had to make up the sauce on my own since the Recipe I was using called for a lot of items I didn’t have. Here is the Recipe I started with and the following is the Recipe I used…

I know that a lot of the ingredients aren’t on sale right now, but I only had to buy a head of cabbage, we had everything else in house.

I have to say this is THE Best beer batter I’ve ever made.. I will be trying this on other dishes!

Ingredients:

Beer Batter

1 cup all purpose flour

2 tablespoon cornstarch

1 tsp baking powder

1/2 tsp salt

1 egg

1 cup beer

White Sauce

1/2 cup Mayonnaise

1/4 cup lime, juice

1/2 tsp White Pepper (Use less or Jalapeno if you don’t have)

1/2 tsp dried oregano

1/2 tsp ground cumin

1/2 tsp Chile con Limon Seasoning (usually purchased at hispanic stores)

Other Ingredients

1 cup oil for frying

2 fillets of fish (We used Ohno, but you could use anything) – Sliced into chunks

1 pkg corn tortillas (I used Mission Flaxseed & Blue Corn Blend Artisan Style Tortillas that I had frozen)

1/2 medium head of cabbage, finely shredded

Directions

1. Make Beer Batter: in A large bowl, combine flour, cornstarch, baking powder and salt. Blend egg and beer then quickly stir into the flour mixture. Set aside.
2. Make White Sauce: In a medium bowl, gradually stir in the lime juice into the mayo until the consistency is slightly runny. Season with white pepper (or you could leave it out if you don’t like spicy), oregano, cumin and Chile con Limon Seasoning (Sour & Spicy seasoning).
3. Heat Oil in Skillet til hot over medium heat. Drop a little bit of batter in it to see if it is ready, when batter starts to fry right away, it’s ready.
4. Dust Fish pieces lightly with flour, dip into beer batter and fry until crisp. The time will depend on how large your pieces are. Mine took atbout 2 mins each side. Drain on Paper Towels.
5. Lightly fry tortillas in same oil, not too crisp. Took about 30 seconds to a minute to get to the texture I like.
6. To Serve, Place fish pieces in tortilla, top with shredded cabbage and white sauce.
