This afternoon I decided to make a casserole for lunch.. This is a recipe I grew up eating.. It’s quick and simple and always leaves us extras to eat later!

This was a cheap meal for us to make. I bought the chicken from Zaycon (about $1.57/lb when I bought it), $0.50/lb Broccoli, $0.12/lb Onion, $0.12/can Cream of Chicken Soup.$0.39 Kraft Freshtake at Fry’s. Over all I’d say less than $5 for a big pan of yummy food!!

 

Ingredients:

1.5lbs Fresh Broccoli or 2pkgs frozen broccoli
1/2 c Onion, Diced
2-3 Chicken Breasts, Boneless/Skinless,  Cubed or Shredded
2 Cans Cream of Chicken Soup
1 cup Mayo
1tbs Lemon Juice
1 pkg Kraft FreshTakes (Or 1/2 cup bread crumbs, 1tsp butter & 1/2 c Shredded Cheddar Cheese)
9×11 Casserole Dish

 

Directions: 

Steam fresh broccoli for 20mins or cook frozen broccoli.

While broccoli is cooking, cut up chicken & onion. Cook in a skillet over medium heat together for 15 mins or until done. Stirring occationally. (I like to add a tsp of Cajun seasoning for just a bit more flavor)

In a bowl, combine soup, mayo and lemon juice. Stir in chicken and onion.  Set aside.

In a separate dish combine breadcrumbs and butter. Stir in cheese. OR mix together Kraft Fresh Take. Set aside.

Grease dish before lining the pan with broccoli (cover as much of the bottom as you can). Cover with soup/chicken mix. Sprinkle with breadcrumb/Freshtake.

Bake at 350 for 30mins or til warmed through.
